the recommended Raid configuration and partitions.

How many users?
How much email?
How much DATA for files and profiles?
SQL?
With only 5 drives you have to know those things before you can make a
BEST CASE suggestion.

My choice would be RAID 5 , Use four of the drives with one as a hot spare

There is an alternate strategy which makes sense
RAID1 (2HDD) OS 40GB, DATA1 100GB
RAID5 (3HDD) DATA2 280GB.
If the controller has two separate channels there is even a reasonable
chance that if one array was on each channel this alternative would
outperform a single RAID5. 4 active HDD's could be close to saturating a
single SCSI bus.
A possible downside being that the controller's performance may be impacted
by the need to keep swapping calculation types due to the different RAIDs.
Depends on controller.
The main advantage of the 2 vs 1 array set would be the ability to
disconnect one of the RAID1 pair before major change to the system (service
pack, software install, etc...). If it goes toes up you fallback to your
unmodified HDD.
Personally, I prefer the hotspare.

E:\80 GB for Excahnge & SQL
F:\100 GB for DATA (user folders)
G:\leftover space for page files & WSUS
I was playing with the raid configuration & got the raid 5 configured but
couldn't see to configure hot spare. how do you configure hot spare?

There is no performance advantage to putting the swap file on a separate
partition on the same array, note.
This depends entirely on the manufacturer - check the documentation or
support.

I kind of like Kevin's suggestion as far as the RAID5 configuration. Super
G's suggestion is also good. although personally myself I prefer to keep the
OS on it's own array if at all possible. If you have a dual channel RAID
controller I would probably invest in two more 36GB drives and make this a
RAID1 array just for the OS and then use the remaining 5 143GB on the other
channel in a RAID5 array with a hot spare. Just me personal preferences as
I'm sure everyone has their own.
